The ancient technique of grilling over charcoal creates a depth of flavour and uniqueness to our food. The high heat that charcoal produces when burnt results in beautiful caramelisation on the outside while locking in flavour and moisture. As these foods are grilled, some drippings fall directly on to the bed of coals below, instantly vaporising into complex flavours and rich smoke which then rise back through the foods – this is what creates the magic of charcoal grill.
